After I pack up what’s left of the hacked-up, once beautiful Thanksgiving turkey, I have little desire to reheat it. The idea of turkey curry, or turkey soup, well, for some reason, it turns my stomach. I guess I don’t really like turkey much, come to think of it.
But in the interest of being a good and faithful blogger, how could I leave you stranded on a Friday evening, staring into the fridge full of stuffing and mashed potatoes and yes, hacked up pieces of turkey with attached, and by now, flaccid whitish skin? So appetizing, that image.
Still, to waste food, especially a bird nurtured by a local farm family, as mine was, would be criminal. So, here are some recipes for those leftovers that actually look good, even if you don’t like turkey much.
You can try Mark Bittman’s approach: “To the long and ever-growing list of things you can do with leftover turkey, you can add a hearty, pleasant and easily made barley risotto.”
Something else that looked appetizing was this morning’s CBS Early Show recipe from Williams-Sonoma, white turkey chili.
Also, if you have leftover sweet potatoes or yams and a yearning for Mexican food, try this from Karina Allrich, “The Gluten-Free Goddess”: Black bean and sweet potato enchiladas.
